  1. Take 70 ml single cream
  2. Use 60 ml buttermilk
  3. Use 1 pints full fat milk
  4. Provide 1 tsp vanilla extract
  5. Take 150 grams caster sugar

  1. Put single cream, buttermilk, milk & vanilla extract in a pan and bring almost to the boil then take off heat.
  2. Whisk egg yolks & sugar until creamy

  4. Take off heat to cool then chill in fridge for 30+ minutes
  5. Turn ice cream maker on paddles turning pour mixture in and leave to run for the 60 minutes or until the machine stops.
  6. Serve immediately with cones, fruit or cake or pop into freezeable container & freeze. If freezing take out 10-15 minutes before serving.
