- You need ribs
- Take Top quality BBQ Rub or a home made one
- Provide Your favourite bbq sauce
Instructions to make JP's Champion Ribs:
- Start by setting the BBQ for offset/ indirect smoking and let the BBQ get up to temperature. This can take up to 30 Minutes so get it started before your expected cooking time. Add your smoking chips or wood, if using the snake method make sure to put the wood within the first part of the Snake as you want all the smoke to be produced in the first 3 hours of the cook.
- Remove the membrane from the back of the ribs and clean up the remainder of the ribs. (This helps the flavour of the rub infuse into the meat a lot more)
- Marinade the ribs with a good quality BBQ rub or a homemade one and leave to rest at room temperature for atleast 2 hours.
- Once your BBQ is upto a temprature of around 110c Place your ribs on the grill, close the lid and let them smoke away. Keep monitoring the temperature and keep it around 110c over the next 3 hours.
- After 3 hours remove them from the grill and spray them with your apple juice or apple cider vinegar mix and wrap them up in tinfoil. Put them back on the grill MEAT SIDE DOWN for a further 2 hours at the same temprature of 110c. Remember to keep monitoring the temperature.
- After 2 hours remove them from the foil and give them a spray. Add them back on the grill and carry on cooking for the last hour. During this last hour you can baste the ribs with your favourite bbq sauce. I do this in the last 20 minutes.
- Spray the ribs with a mixture of apple juice or apple cider vinegar and beef stock often. This help keeps the moisture on the ribs and don't forget to monitor the temperature.
