  1. Get 1/ 400 grams Baingan / Brinjal
  2. Use 4 tbsp Mustard oil
  3. Get 1 tsp Jeera

  7. Prepare 4 pinch Hing

  1. Take a Bharta Baigan/ Brinjal. Choose it wisely and take a soft baingan / brinjal without any holes in it. Grease it well with oil.
  2. Now place a rack over the flame and cook the baigan/brinjal on all sides equally. Let the outer skin burn properly and turn it in equal intervals to avoid it from excess burning.
  3. Let it cool for a while and remove the skin of the baigan/brinjal and with the help of fork mash it properly.
  4. Now in a pan add mustard oil (you can take any variety as per your choice) and then add jeera and mustard seeds, when it is heated properly. Mix it for a while.

  8. Now cover and cook the tomatoes for about 4-5 minutes. It may take more time in some cases.
  9. When the tomatoes are cooked properly add your mashed baigan to it and mix well.
  10. Cover and cook for about 4 to 5 minutes again so as to cook it properly. Then garnish with coriander leaves.
