  1. Use small eggplant/brinjal/bengan, chopped length wise
  2. Get large onion chopped lengthwise, finely
  3. Use green chill,slit length wise
  4. Provide chopped garlic
  5. Get medium tomatoes chopped
  6. Take dry red chillers (not so hot)
  7. Use ponch phoran
  8. Get turmeric powder

  1. Heat oil in a kadhai. Add dry chillies and ponch phoran. Allow phoran to splutter.
  2. Add chopped garlic and slit green chillier. Saute for 1 minute.
  3. Add chopped onion then. Mix salt and turmeric powder and saute till onions and transparent.
  4. Add chopped eggplant and tomatoes. Mix well. Cover and cook till brinjal get cooked on low heat.
