- You need 1 aubergine
- Get 1 courgette
- Provide 1 red pepper
- Take 250 g cherry tomato

- Heat the oven at 180
- Cut the aubergine, courgette and red pepper. Toss with the olive oil, salt, pepper and oregano. Spread the vegetables out on a tray and roast for 20 minutes
- Remove the vegetables, add the cherry tomatoes and gently toss everything together. Return the tray to the oven for 15 minutes
- After 15 minutes add the grains and lemon juice and gently mix them in with the vegetables. Then sprinkle the feta and pine nuts on top and return to the oven for 5 minutes
