  1. Prepare 1 large eggplant, roasted
  2. Provide 1 tbsp. olive oil
  3. Provide 1 tsp. garlic, chopped
  4. Get 1 capsicum, chopped finely
  5. Provide 1 tomato, chopped finely
  6. Provide to taste salt
  7. You need 2 tbsp. sesame powder / paste
  8. Prepare 1 tbsp. lime juice
  9. Prepare 2 tbsp. chopped coriander / parsley leaves
  10. Take 1-2 green chilies, chopped
  11. Prepare 1/2 tsp. pepper powder
  12. Provide 1 tbsp. olive oil + some extra for garnishing
Steps to make Moutabel:
  1. Discard the charred skin of the roasted eggplant & mash or chop the pulp finely.
  2. Heat oil in a pan and saute the garlic till they change colour. Add the chopped capsicum and fry for 2 minutes.
  3. Then add the tomatoes and a pinch of salt and further saute for a minute more. Switch off the flame.
  4. Add the mashed eggplant pulp and rest of the ingredients and mix well. Transfer to a serving dish and drizzle some extra olive oil.
  5. Serve as an accompaniment with crackers, veggie crudites, our very own parathas, naan, roasted papads or as a spread on sandwiches.
