- I use a homemade potato mash and celeriac or garlic mash, that is not runny or sloppy, but if you are in a rush boil three cups of water, then put into a bowl add the powder mash, make sure it is of good quality, stir and leave to stand for a minute, The egg and cornstarch needs to be added whether you use homemade mash or powder mash, mix well.
- Grease a baking tray with the oil
- Add your potato mash to the tray making a pizza shaped base, about 30 cm big. Bake at 225C for about 20 minutes.

- Sauté one thinly sliced onion and one crushed or very finely chopped clove of garlic. Drain fat from it and the onion and garlic mix over the tomatoes on pizza
- Season well with thyme, oregano,salt or salt substitute and pepper.
- Cut the sheep's or goats cheese into small cubes sprinkle over the pizza
- Add the olives and sprinkle with parmesan
- Drizzle with olive oil
- Bake for about 25 minutes until slightly browned on 225C. Sprinkle with a little fresh basil.
