The ingredients needed to make Pakwan Sev Puri:
  1. Get For mini pakwan (50 puris)
  2. You need ,2 cups maida
  3. You need 4 tbsp ghee
  4. Use to taste Salt
  5. Take 1/3 cup rice flour
  6. Use 3 tbsp ghee (to add in rice flour)
  7. Take as required Oil for frying
  8. You need For sweet chutney
  9. Prepare 100 gms dates(khajur)
  10. Use 1/2 lemon juice
  11. Use 1 tsp red chilli powder
  12. Use 1 tsp roasted cummin powder
  13. Take to taste Salt
  14. Prepare For green chutney:
  15. Prepare 1 cup chopped coriander leaves
  16. You need 1/2 cup chopped mint leaves
  17. Take 4-6 green chillies
  18. Provide 1 " ginger pieces
  19. Use 2 pinches black rock salt
  20. Get to taste Salt
  21. Take 1/2 lemon juice
  22. Provide For topping.
  23. Take 3-4 Finely chopped onions or as required
  24. Get 3-4 Finely chopped boiled potatoes or as required
  25. Use as required Besan Sev to garnish
  26. You need as per taste Chaat masala
  27. Prepare as required Finely chopped fresh coriander leaves
  28. Provide as required Pomegranate seeds
Instructions to make Pakwan Sev Puri:
  1. To prepare mini pakwan (puris). Mix maida flour, salt and ghee. Bind into puri like dough. Keep cover for 1/2 hour. Mix rice flour and 3 tbsp ghee. Whisk together to make fluffy mixture.
  2. Make 12-15 small balls from dough. Roll out 3 thin rotis from 3 balls. On one roti thinly spread rice flour- ghee mixture. On it place another roti again spread rice- ghee mixture. On it place 3 rd roti pressed and apply rice- ghee mixture. Make tight firm roll Cut into 1/4"pieces. Roll each piece into 1" puris..as shown. Prepare all mini pakwan puris similarly.
  3. Deep fry in hot oil on slow flame till crispy golden. Store in Airtight container.
  4. FOR SWEET CHUTNEY.Boil dates with water in the cooker. Cool and blend in mixer grinder to smooth mixture. Remove in bowl, add red chilli powder, salt, cumin seeds powder, lemon juice, add enough water to make chutney. FOR GREEN CHUTNEY..Grind all ingredients mentioned to make smooth paste add enough water to make chutney.
  5. To serve/ prepare Pakwan Sevpuri. Arrange 6-7 mini pakwan puris in serving dish. On it place little chopped onion and potato pieces.
  6. On it pour 1 tsp each of sweet chutney and green chutney. Garnish with besan sev, finely chopped coriander leaves and pomegranate seeds. Sprinkle chaat masala and serve.
  7. Serve/ Relish Pakwan Sevpuri as party appetizer.
