- You need 1-1/2 lbs pot roast
- Provide 2 tsp olive oil
- Prepare 2 med potatoes diced
- Get 1 celery stalk diced
- Prepare 1 red bell pepper diced
- Get 4 garlic clove minced
- Provide 1 onion diced
- Prepare 2 carrots diced
