- Provide 3/4 cauliflower head, medium florets
- Use 3/4 cup green peas
- Prepare 1/2 cup finely chopped carrots
- Use 1/2 cup corn kernels

- Prepare 1 large potato cut into cubes
- You need 1 large onion thinly sliced
- Prepare 1 large tomato roughly chopped

- Take 2 green chillies finely chopped

- Take 3-4 stalks coriander leaves chopped
- Provide 1 tbsp cumin
- Provide 1 cinnamon stick

- Prepare 1 tbsp garam masala
- Get 1 tbsp kosher salt
- Provide 1 tbsp kasuri methi
- Prepare 2 tbsp ghee/ oil
Steps to make Mix Veg Kadhai:
- In a large wok take 2 tbsp of ghee, once hot add cumin, cinnamon and bay leaf. Wait for cumin to crackle.
- Now add garlic, green chillies and onions. Saute till the onions become golden.
- Add tomatoes and let it cook till mushy. Add all the spices and mix well. Cook till the ghee separates.
- Add cashews, cook for another minute.
- Add all the vegetables and mix well. Cover for 3-5 minutes. Check if vegetables are half way cooked.
- Remove the lid, add 1 tbsp of kasuri methi and mix well. Cook for another 5-7 minutes on medium flame. Turn off the flame after it's cooked well.
- Garnish with coriander leaves and serve hot with rotis.
