  1. You need 3 tomatoes Large fresh ripe
  2. Prepare 1 Celery stalk (no leaves)
  3. Get 1 - 2 tbsps Olive oil butter / clarified (ghee)
  4. Get 1 1/2 cups Water
  5. Use 3 - 4 pods garlic finely chopped
  6. Take To taste Sugar
  7. You need To taste Salt
  8. You need pepper Freshly ground

  1. Pressure cook the tomatoes, grind to a paste / puree in a grinder /mixer.
  2. Take a heavy bottom pan or a non stick pan; add 2 tsp oil / ghee.
  3. Once hot; add the finely chopped garlic and chopped celery.
  4. Sauté for a minute, add the tomato paste/ puree.
  5. Adjust the salt, add freshly ground pepper and sugar if the tomatoes are too tangy. I usually add 1 -2 tsp of sugar.
  6. Add water and let it boil for 2-3 minutes.
  7. Serve hot – If you are not watching your weight add a dollop of white butter (loni) tastes great
  8. This soup goes well with hot rice as well. Enjoy!
