The ingredients needed to cook Pumpkin Soup:
  1. Take 200 gms Red Pumpkin
  2. Provide 1 sliced Onion
  3. You need 4-5 Garlic cloves
  4. Get 1/2 inch Ginger
  5. Take 3-4 tsp Olive Oil or Butter
  6. Provide 1 Bay leaf
  7. Get 1 inch Cinnamon stick
  8. Use 2 Cloves
  9. Use 2 Cardamoms
  10. Get 8 Black Peppercorns
  11. Take 1/2 tsp Jeera
  12. Get 2-3 tsp Fresh cream or Malai (daily milk topping)
  13. Provide For Garnishing:
  14. Use 2-3 tsp Fresh Cream or Malai
  15. Prepare As required coriander leaves
Steps to make Pumpkin Soup:
  1. Heat oil in a pan, add garlic, onion & mentioned whole spices, saute for 2-3 mins. Then add peeled & finely chopped pumpkin and salt. Saute for a min.
  2. Let it cook covered for 3-4 mins. Then add 350-400 ml water, bring to a boil. Reduce heat to low, simmer for 10 mins until pumpkin get softened.
  3. Strain it to remove the whole spices to keep the flavours mild. Again put back the cooked pumpkin. Let it cool.
  4. Now puree it using food processor or hand blender. Pour back the puree to the pan, bring to a boil, stir it & then simmer it for 10 mins uncovered on low flame. Adjust salt & pepper. Stir in some fresh cream (optional, I used Malai).
  5. Garnish with some more cream & coriander leaves. Enjoy Hot!
