- Take Olive oil
- Use 4-5 andouille sausage links, halved and sliced
- Prepare 1 onion diced
- Prepare 1 red bell pepper, diced
- Get 1 Tbsp Cajun seasoning
- Use 1 tsp garlic salt
- Use 1/2 lb shredded chicken
- Take 2 cups chicken stock
- Get 1 cup tomato sauce
- Use 1 (15 oz) can red beans
- Take 1 cup rice
- Provide 2 spring onions, sliced
- Get 2 Tbsp cilantro, minced

- Heat 2 Tbsp oil in a medium stock pot over high heat. Add the sausage and sear without moving for 2 min
